Slaughter Process

We are aware of our responsibility during the slaughter process and constantly strive to apply the maximum possible care here. During unloading, in the waiting pens and in the stunning and slaughter areas, the focus is on the well-being of the animal. As we stand for transparency in our activities, it is possible to follow the slaughter process in Graz via live videos.

ANIMAL WELFARE MEASURES

  • Since the beginning of 2017, our company has installed a separate executive department for quality assurance that is responsible for animal welfare and hygiene tasks
  • Slaughterhouses are visited regularly and audited with a special focus on the area of animal welfare
  • In 2018, an expert assessment of our own specialists in the area of animal welfare was conducted by the BSI-Schwarzenbek (Training and Consultancy Institute for Animal Welfare during Transport and Slaughter) within the framework of a self-assessment centre (audit over several days)

TRAINING AND SELECTION OF THE EMPLOYEES

The personality and attitude of the people involved are of fundamental importance during the handling of live animals.

  • Careful selection of employees in this area
  • Introductory and accompanying courses of training
  • Many years of service with the company

SLAUGHTER PROCESS FOR BEEF

UNLOADING

  • Inspection of the live animals by the official veterinarian in charge
  • Assessment of each individual animal by trained employees
  • Separate bay for animals that are conspicuous in their behaviour
  • Stress-free unloading, also in bad weather, via a covered level ramp leading directly into the pens
  • Upper limit for number of animals per pen
  • "just in time" delivery prevents overcrowding

PEN AND CHUTE

  • Fixed railings guide the animals in the required direction
  • The chutes and bays are equipped with drinking troughs
  • Electric prods are not used in the pen
  • Curved and ascending chute to the stun box according to the latest scientific evidence
  • All areas are equipped with an in-house live feed video recording (recordings in real time on the screens in the offices of the respective company management, the quality assurance/quality management, the live animal purchasing department, the management of the pen department and the official veterinarian).

STUNNING

  • Head fixation (according to EU (Regulation) 1099/2009) is implemented at all sites. This rules out any error during stunning
  • Pneumatic penetrative stunning at all slaughterhouses. A 14-bar shot of pressure instantly causes the animal to lose consciousness and the ability to feel anything

SUSPENSION AND FURTHER PROCESSING

  • Rapid sequence of stunning / suspension / cut to open the skin / sticking - all within a period of 60 secs
  • Sufficient time to bleed out from the occurrence of death until further processing of the carcase – this makes it possible to check and guarantee death by withdrawal of blood
